This Month at the Resort

This Month’s Recipe

We bake over 1700 mini-loaves of “Welcome Breads” a year.   Guests love them and ask for the recipes.  We’re happy to share.

Lemon Cranberry Bread Makes 8 mini-loaves. Oven 350 degrees.

3 cups Flour
1 tsp Salt
½ tsp Baking Powder
1 tsp Baking Soda
½  Dried Cranberries (Craisins)

1 ¾ cup Sugar
3 Eggs
1 cup Oil

3 containers of Lemon Yogurt (6 oz)
1 T Lemon Extract

Sift the flower, salt, baking powder and soda together.  Add dried cranberries to this mixture. In an electric mixer ream together the eggs, oil and sugar. Using the mixer slowly add the flour mixture to the wet ingredients. Add yogurt and lemon extract. Don’t overwork. Pour into greased mini loaf pans (3”x5”).  Bake approx 30 minutes. Better results when ingredients are at room temperature.  Freezes well. Use regular or low-fat yogurt.  Do not use non-fat yogurt.
